That is pretty darned cool. I only there were more plants that could be used in similar ways for other structures.
 

Well, kudzu grows fast and thick. It could essentially do much of the same thing, and on a much shorter time scale. I don't remember how woody its stalk/trunk gets, though. Still, it probably wouldn't be any worse than a rope bridge.

AND I'm told it's leaves are incredibly nutritious...like hyper-spinach.

The guy was talking about having a bridge that lasted 500 years. A tree might do that, I'm prettysure kudzu doesn't last that long.

And I'm not thinking foot bridges. I'm thinking other buildings - houses, grocery stores, yoga studios, municiple stadiums.... Wouldn't you like to see a Whole Foods grown out of a tree or something?

True, but with as many as 30 vines springing from a single crown, and a growth rate of 1'/day under less than ideal conditions- and several feet daily with good circumstances- you could probably simply keep regrowing the thing.

Of course, you couldn't have goats anywhere near it...

Wouldn't you like to see a Whole Foods grown out of a tree or something?

Using those techniques, you probably still couldn't build a Whole Foods...but you could make for a nifty Farmer's Market, gazebo or other open-air pavilion.

Maybe an open-air church?
