So how does it slice and/or dice?

Depending on the DM, it could slice and dice by simply causing the flesh to part psychically- perhaps its molecular bonds simply cease to be.

it doesn't slice and dice as you put it, rather piercing

Depending upon which shape the blade is in...which depends upon the Soulknife's level, situation, and what sources are available. It could be a bludgeoning weapon. Or even be used for a shield-bash...

I am curious but this would leave a mark, no?

if the molecular bonds broke down you would be able see it happen and it would leave some sort of mark (I don't pretend to know what sort of mark maybe necrotic flesh or the skin/flesh turns to dust or something)
 

There would be a wound, but it wouldn't have any kind of telltale "tool marks." it would be like a piece of ice cut by a jet of heated air.
