Is it inherently evil to summon up a demon?

Yes, and Druzil betrayed Cadderly and became a familiar to a drow wizard. It also helped free Errtu.

It might not have been an evil act but it had horrible consequences. It united Errtu with the crystal shard.

Oh, and I've always associated "The Ends Justify the Means" as at least lawful evil. I'm currently DMing a lawful evil group. They battle evil more often than good. They recently spared women and children. They destroy slavers wherever they find them.

They also inflict horrendous atrocities upon those who cross their paths. The assassinated a cleric of Nerull because he preyed upon the innocent. Killing him wasn't enough. The Death Grimace was cast upon his face and then he was zombified. They find horrible, ironic ways to kill their opponents. When they discovered a goblin adept's favored method of torture, they used it on her.

Well, if you're summoning a demon to have it kill things, that's evil. If you're summoning a demon to learn an ancient cheescake recipe, that's not evil.:D

You're still running the risk of summoning something that might corrupt you...

The recipe might secretly be a curse that makes you gate in balors everytime you blink an eye!

What does the demon want in return for the recipe? A demon would never give something away for free.

You'd be surprised. how can you + Holly(or Toni, who I will hold until the day I die up as cute) not equal attraction. It's a crazy mixed-up world Isaac.
