If you want something generic I would go with Brawler, you did mention less disciplined so that seems a good fit.

I notice you're doing a final fantasy type setting, if you want something more anime no reason not to get a bit more silly, like say Panzer Fist or something.

I also would suggest "Irregular", as no one else has mentioned it.

I can see why that would make one want to punch people, but they have pills for that now.

Unless you're also going to strip/replace all the funky chi-based Monk abilities, I think you'll need to come up with a 'fantasy' name for the class or something very different than variants on 'fist fighter' since the class does a lot more than pure martial combat.

For some reason I thought of Shepherd Book from Firefly/Serenity when I read the OP. Even though he was associated with a Monastery for a time, he didn't start out that way. If you wanted a non-chi, non-monastic monk that still had a philosophical, unarmed type of vibe, how about calling the class a Shepherd based on the aforementioned character.
