Why not figure up each arrow individually? If your total attack roll bonus is a 21, just add them up as if you were shooting them separately, so add the +5 arrow to that, your three +4 arrows, and your one +1 arrow to see how you do. Your five arrows would look like this: 26/25/25/25/22. Not exact numbers, but you see what I mean.
 



You would apply the damage from all sources except sneak attack on each arrow. This includes Strength (if applicable), weapon specialization, enchantment (from the arrow and the bow), point blank shot, etc. As has been said before, manyshot works exactly like shuriken. As far as the enchantment bonus to hit with differeing arrows, that's a very good question. Here are a few options:

1. Use the highest arrow to determine the attack roll.

2. Use the first arrow to determine the attack roll.

3. Modify the attack roll for each arrow. This is the most realistic way, but also the most cumbersome. This doesn't mean to reroll for each arrow, just apply the hit bonuses individually to the same attack roll. For example: Let's say I was shooting a +2 arrow and a +1 arrow. I have an attack bonus of +5. If I roll a 10, then I would have a 17 to hit with the +2 arrow, and a 16 to hit with the +1 arrow. Thus I may hit with some arrows, but not others even though I'm only shooting once.
