Don't play level 1-3. By level 5 characters can rez so a killer crit isn't a big deal. Alternately, accept that monster balance really really bad and you will have to simply avoid many of them. For instance the Bulette at level 5 can crit for 100 and The triceratops can put out 136 damage at level 5 (although a double crit isn't likely). Even the AVERAGE damage on a Bulette's crit can outright slay many 5th level character from full HP. Don't use them.
