I think its because the public poll on whether they should be demons or devils (4e) was so close. Making them something else/either seems to be the outcome

I think I saw somewhere that they were going to use the succubus as either/or devil or demon. Unfortunately, I don't have the reference handy. I think it was in an interview somewhere. But if so, it makes sense it would be separate. Also, let's them fall into pre and post 4e mode (since 4e had them as devils).

What's an Empyrean? I'm guessing its the new name for the Archons? Or Celestial Eldrin? Or Planetouched?

That was my question too, What is an Empyrean? There's just one stat block on the single page devotd to the monste, so it can't be too complex."Empyrean" means celestial, or related to the upper reaches of the sky.

Not just modrons but slaadi, yugoloths, and the gith races? My Planescape campaign is looking more likely all the time! (Plus even thri kreen? Not Planescape but a cool race nonetheless. If formians and the planetouched were in there, it'd be my ideal.)

5e Slaadi come in the flavors: Blue, Green, Red, Death, and Tadpole.
Gith include a Githyanki Knight and Warrior & Githzerai Monk and Zerth.
Yugoloths include Arcanoloth, Mezzoloth, Nycaloth, and the Ultraloth.
