Probably either one short 4 hour adventure, and a long 6-8 hour adventure, or three short 4 hour adventures. I'd have no problems swapping players between sessions, as I hadn't planned on having the adventures related.
It'd give more players a chance to play.
Like you said, though, let's see who's interested in what.

If I'm wanted to DM, I'd probably run something Planescape (again), or something Bronze-Agey, or something Stone-Agey, or even just the classics in my homebrew world.
