D&D 5E Multiclassing more than once per level?

so for the "real" class, I should do only one right or would it be ok if I let them pick aspects at each level? Just a curious idea.

You could probably figure out a way to make picking various aspects work, but it will be a lot of work to do well.

Besides that, there already are classes and subclasses that are meant to emulate this to some degree, whether it's the paladin mixing cleric/fighter or eldritch knight mixing wizard/fighter.

So, I don't think the amount of work you'd have to put in to get something decent would be even close to worth it, so I advise not doing it for that very reason.

Or, if you really to let the players pair up a couple classes, use those gestalt rules someone linked to near the start of the thread.
