Multiple poison-effects?

Just about anything.

Except for constructs, elementals, oozes, plants, undead, anything that passes it's fort save, and any creature whose spell resistance the caster fails to penetrate.

And anything that can make a Fort save.
 

I would strongly recommend against increasing the DC of the poison. If the poison damage was paralysis or death and the save was normally low, say DC 10, getting hit by 6 shuriken makes that a DC of 20, which is much more difficult to make for some characters.

As much of a pain as it may be, I'd roll individual saves. It also seems kinda a ripoff if you're only allowed one save (and a more difficult one at that!) but will be suffering the cumulative effects of ALL the attacks if you fail.
 

Separate saves...

I think I'll go for the separate throws.. As it would also seem unfair if a PC is throwing all those shurikens at a target and the target actually makes the one hard save.. all that poison is a waste then =( .. but if there were separate throws for each shuriken, the chance of actually delivering some poison is much larger.. I reckon... (?)
