Question 1: Do you, or would you, allow gods/goddess to have paladins that do not have lawful good cleric alignments?
Paladins? No! Other classes of the appropriate faiths? Yes! They would NOT be called Paladins, however!

Question 2: If you do allow the above are the paladins the same alignment as the god/goddess or do they just need to fall into the cleric alignment?
The same alignment.

Question 3: Do you have balance between good verus evil?
I would try to, yes.
The alignment section has names for these "classes", by the way... LE (Devilish) Dominators, CE (Demonic) Destroyers, CG (Righteous) Rebels, etc., etc. That's a good place to start!
If I were doing D&D (and, obviously, I'm not!), each LG Paladin would have the levels at which they gain no new powers filled with an appropriate power related to their deity... A Paladin of a LG Water god might have Water-breathing ability, for instance, then later acquire immunity to pressure/bends, then still later cold, etc. A LG Paladin of a fire god might gain immumity to flame, and then later some fire spells, etc.
Non-LG classes (can't call'em Paladins, and "(Un)Holy Warriors" is a bit unwieldy) should have powers on par with the Paladin, but not neccesarily the same... The "Crusader" Paladin is based upon the Crusader of history, with all the trappings of Catholicism, Chivalry, and Medieval Knighthood. "Divine Warriors" of Tulkas probably wouldn't, but would be more like Monks who specialize in wrestling. Etc....
