Well...it's a little more complex than that.

With specific respect to the Jews and Muslims, it's really up to each game, but the canon assumption (if it can be called that) is that God is mysterious and that both of those faiths are in touch with Him. This approach is described in the Kabbalah supplement, as well as in the next sourcebook we'll release -- Blood and Sand: The Levant Tribunal (which is located in the Near East, and thus involves a lot of Islamic characters, Arab sorcerers, genies, and all that).

The "medieval paradigm" ("The world really is the way the medieval people thought it was!" -- well, which people? must not some of them have been wrong, since they didn't all agree?) is a neat starting point, but definitely problematic in its detailed application. I think that's actually part of the game's appeal for its devotees, however.
