As Alzrius said most of that is coverd in the Epic Level Handbook (ELH), but to follow on your theme, the character I am playing (almost 21st level now) will start taking more levels in Paladin up until he hits Sor1/Pal20/DrD10 (assuming we get that far) making him a 31st level character. On the other hand I could start taking more levels in sorcerer (stopping me from any more levels in paladin) or use the WoTC Web Enhancement for the Dragon Disciple to take more levels in that. The ELH basically covers gaining levels after 20th to infinity, in whatever classes you want to take. The reason most people are saying Sor1/Pal9/DrD10 is that by getting 1 level of Sorcerer you effectively gain the hardest requirements for Dragon Disciple (to be able to spontaneously cast arcane spells), and IMO going up further as a sorcerer is pretty much a waste of time as you won't get many more spells.
