A while back there was a poll about this, but it might have been eaten, I'm not sure.
For me, a 2 level difference is enough. This is usuall self-correcting, though because of 3.5's XP award system, giving more XP to lower level characters than higher level characters for the same CR challenges. I'm not sure how much this would self-correct, however, if you have regulars and casuals.
