I'm curious to know, what exactly is the formula used to figure out the saving throw DC for a creatures special ability?
Is it 10 + 1/2HD, or something like that?

Generally, for non-spell-like abilities, the savd DC is 10+1/2 creature's HD + the relevant ability modifier. You can see some example equations in the MM on pgs. 8-9 in the "Special Attacks" section. For example, for a gaze attack, the save DC is 10+1/2 creature's HD + the creature's Charisma modifier.

Non-spell-like abilities:

DC 10 + 1/2 HD + relevant ability modifier (either Con or Cha in almost all cases).

Spell-like abilities:

DC 10 + relevant ability mod [depending on how they cast spells, i.e. as a cleric, druid, wizard, or sorcerer] + spell level)
