D&D 5E Running Storm King's Thunder -- Bestow Upon me Your Wisdom

I have decided to run Storm King's Thunder (as opposed to my usual home brewing) for my group since I am stressed for time this summer. I am looking for your practical advice based on actually having run the things, if you please.

A couple notes: we are a large group (8 to 10 players per session) and I plan on simply doubling-ish the number of creatures in any encounter. Is this a viable method for balancing for the large party? And, we are playing on Fantasy Grounds, if that has any impact on your advice.

1. Read the main SKT thread, 'tis awesome.

2. My group typically has eight PCs, and it is manageable.
You need to be rocksolid disciplined with Initiative. Anyone hesitates too long, move on. You can come back round to them later.

A lot of the game mechanics work because the PCs are outnumbered, be prepared to use massive numbers of bad guys (double is a good rule of thumb, but I've been upping it considerably in recent times).
