I'd say you can use a sling or a hand crossbow in one hand while using a small shield or buckler in the other hand, but on any turn you did so, you'd lose the bonus from the shield.

Since a large shield occupies the hand, not with a large shield.

This may seem odd, but I think it depends on the order of events.

Load, then fire is probably okay, because your last action in your round is to fire, at which point your buckler/shield is ready to defend you.

If you get stuck in a fire, then reload scenario then you get no defence from the buckler/shield, because the last thing you did was use your shield hand for something other than defense.

This may seem weird, but I think it fits within the rules well.

Alternately, you could simply disallow the use of the buckler/shield.
 

Hmmm,

The rules for a crossbow requiring two hands are pretty explicite. The lack of such for the sling leads me to believe that it could be used with one hand.

I'm probably going to allow players to load and fire a sling with one hand. Still considering though.
