Sneak attack inside a creature?

A good reason right there to not allow it.

If the creature has Uncanny Dodge, then the rogue couldn't sneak attack him from within, because it protects against attackers it can't see.
Otherwise, a rogue in the belly can't be seen, so stab away with those fistfuls of dice.
There's almost never any chance of getting out by beating a grapple check, even if you're built to do that sort of thing. Death by internal stabification is the standard cinematic action.
