Leaving Conan alone... I haven't read one of Jordan's Conan books, but if he can't maintain his standards for his claim to fame, he shouldn't be given more work in any serious production.
The first WoT book could be done, if the two forsaken who popped out could be made to seem like the two leaders of the Shadow under an elemental force of evil. A whole lot of stuff would have to be respun, and some of the later character development would have to be brought in. Because in the first book, the main characters were no particularly exciting to have on screen. They were kids with some good ability scores. It would be like LotR but only Gandalf, Aragorn, and the Hobbits.
