What about the Kensai PrC from Complete Warrior?

The mindblade would be the perfect signature weapon (if your DM allows it), as it's very versatile and you can't lose it. The signature weapon enchantments and power surge abilities would fit perfectly for soulknifes, even if you ake only 3 or 4 levels of kensai.

Focused Mind (achieve psionic focus as a move action) is really useful, if you decide to have Deep Impact and Psionic Weapon.

The feats that allow you to have a Psicrystal, and to store a psionic focus in your Psicrystal are good as well.

Psionic Body means you get more and more hp on top of that d10 HD.

And since you're using Races of Eberron, the Atavist PrClass keeps advancing your mindblade.

I'm sorry I wasn't entirely clear...what bugs me about expending focus is that you can't use all the feats at once.

Psi Weapon/Greater Psi Weapon, and Deep Impact all require expending your focus, so you can't get that +4d6 from Greater Psi while resolving it as a touch attack:

1) Thus, True Strike...you get your +4d6 and +20 to your attack (S-K/Sorc)

2) Thus Sneak Attack...you get +4d6 and resolve as a Touch Attack (S-K/Rogue)

3) Thus Weapon Afire..you get +2d6 Fire and resolve as Touch Attack (S-K/Pyro)

And so forth...
