Sunder implies getting through hardness someway, not bypassing it. This is a force effect, not a ghost touch effect or brilliant energy effect. Both of which would make this spell useless since the spells will just by pass the physical item to hit the opponent which is not the target of this spell.
Each missile is separate and requires it's own range touch attack roll. Considering touch attacks have a different ac than regular ac, I think it's feasible to say that a miss would mean it damaged something nearby instead of the weapon you are holding.
