it's difficult to discern much of a difference between these two characters' stats.

Stray thought about that. They are both Jedi Knights / Masters. I'd be surprised if the system they both grew up in produced too many differences. The differences there are (Deception 4 for Dooku) strike me as a result of Count Dooku's turning to the Dark Side and his greater experience.
