Stunning Fist

Stunning Fist says the enemy is stunned until just before your next action. So, does that mean when your turn comes around again, he has his Dex bonus to AC back already and you don't get to take advantage of his lowered AC?

Yes, but remember that the subsequent attacks you make, DO enjoy his lower AC, along other party members. Specially the rogue.
 

He'll have his normal AC - but since he'll be probably picking up the weapons/equipment he droped the round before, you're still in for an advantage in the next round.

Exactly. And he just lost one action.

Plus: If you stun him again, he won't be doing anything at all.

I've seen monks win against fighters in one-on-one fights... due to a little bad luck on the fighters Fort save side.
