If you're looking for the least fiddly option, why not just use the monster's stat block? That's about as least fiddly as it gets.

It was a variant that replaced the 3.5 druid's wild shape with specific forms: predator, aerial, etc. You could color them how you liked, but it was a lot less fiddly.

They tried something like that in the DNDnext playtest, but I don't believe it was very popular.

I would take the union set of animal/druid proficiencies, use highest proficiency modifier (which will always be the Druid's, won't it?), and then use animal stats for Str, Con, Dex and Druid stats for Int, Wis, Cha.

It sounds like a lot of work, but tell the player to have it prepared ahead of time for animals they might want to use; otherwise you'll just use the regular animal stats.
