The best non-monk unarmed combatant

Although you mentioned only core/complete books, you might want to ask your DM about the Superior Unarmed Strike feat from TOB:9swords. It grants you a damage progression like the monk, except it caps at 2d6.

I would go fighter or fighter/barb with improved grapple. With a full BAB, high strength, and the +4 for improved grapple, there's not much you can't put in the dirt.

If you've ever watched ultimate fighter, most battles end up as grappling battles, so its makes perfect sense from a flavor point of view.

Also to help your damage, wear gauntlets. If that doesn't fit your character idea, change the flavor!! Yes on your character sheet your wearing "gauntlets" but in game you have hardened hands with tape or rope rapped around them all of the time, ready to brawl.

Man, thanks for all of the ideas! I somehow missed the last slew of them. Are there any good grappling feats or PrCs (aside from the Mauler one from Comp. Warr.) that I should look for?

Psiwarrior works well as detailed above.

A Swordsage from ToB can also work well, and as mentioned that book has a feat that basically gives you monk unarmed damge 4 levels behind. There is also a feat in there that will let you stack your wisdom bonus onto your unarmed damage. So it's a useful book for unarmed types.

A Fighter as mentioned will work well.

Multiclass your butt off to cherry pick or to represent a dilletante. Don't forget the Drunken Master from Complete Warrior.

For an oddball unarmed fighter consider a Binder from ToM. One of the vestiges will grant monk AC bonus and Unarmed damage. Another has claws.

Multiclass as a Bbr1/Clr1/FtrX. For cleric, choose Kord as your diety (with the Strength and Luck domains). Strength domain allows you to cast Enlarge Person as a domain spell. And if you are allowed PHBII, then you can take the alternate Cleric class ability to spontaneously cast spells from one of your domains instead of cure spells (obviously for Enlarge Person, as you can't prepare Enlarge Person in a non-domain slot as it isn't on the Cleric spell list).

Feats are mostly obvious - Improved Grapple, Improved Unarmed Strike, TWF, Wpn Focus/Specilisation grapple (and/or unarmed strike, depending on your flavour), Power Attack.

Complete Warrior has some additional grapple-based feats worth considering, like Earth's Embrace.

But also consider Stunning Fist, if only to get access to Weakening Touch (CW).

I'm looking to be a mundane streetfighter type, so I'm going to stick with Fighter/Barbarian. (And maybe a level of Battledancer if my GM would allow it.) But thanks for all of the thoughts! One more question: are there any feats that give the Improved Grab ability that some monsters have? That'd work perfectly with this character.

psionic warrior.

Grip of Iron, Expansion, Claws of the beast, vampric touch, Strength of My Enemy, etc.
Then add in the greater mighty fist +4d6 and some other neat psionic feats.
