The best cheese for burgers and grilled sandwiches is American cheese, because it melts without splitting, has a nice stretch, and doesn't overwhelm the other ingredients.
I worry someone might misunderstand what I wrote, so I feel the need to clarify something. When I said "American cheese," some might have heard me say "Kraft Singles." But that's not what I said.
There are many kinds of American cheese, and there are far better options than Pasteurised Processed Cheese Food. If you like Kraft Singles, by all means use them...but if not, shop around. You will be rewarded with delicious cheeseburgers, tuna melts, cheesesteaks, and grilled cheeses.
