We usually have only 1-3 encounters per day, sometimes the next right on the heals of the last, and often several days (or weeks, or months) between days with encounters in them.
So, we do 15 minute short rests, and 24 hour long rests. This way we don't get casters blowing their full armamentarium every fight, and days in which a short rest between fights actually happens.
EDIT: Although now that the Druid has Transport Via Plants and the Cleric has Word of Recall, they mostly Transport in, fight one battle, and Recall out.
