Oh, and check in your local bookstore for good books on Chinese and Indian cuisine -- if there are no good vegetarian recipes there, then you are majorly in trouble, given the temperament of those culinary schools!
I had a fiancee who was vegetarian. Every year at this time I would make her a Fu-Key. Essentially I started with her tofu "burger" recipe, but added in Bell's Seasoning and rather than shaping it into patties I went to town. The last time I made it I actually put a touch of soy sauce in part of the recipe to make the "dark meat" and the whole critter was something like 6" long (no, didn't even attempt to do full size!) and has a small cavity for about 1tsp. of stuffing
Sadly, despite all my culinary expertise, she ended up leaving me before we got to the alter, but at least she went off well fed!
