In my last D20 campaign, we primarily used Arcana Unearthed, so we didn't use the core classes. The closest we got to the "core" was Monte's variation of the Bard found in CBoEM.

I voted based on what I allow.

Here's the list from what I remember (spans several books)
Barbarian
Bard
Cleric
Druid
Monk
Paladin
Rogue
Fighter
Ranger
Wizard
Gunmage
Fell Caller
Scout (from WoW)
Hunter
Marshal
Healer (from Miniatures Handbook)
Akashic
Champion
Templar (WoW Paladin)
Incarnate
Totemist
Psychic Warrior
Soulknife
Psion
Wilder
Samurai (from Legends of the Samurai)
Ninja
Spellthief
Warmain
Unfettered
Oathsworn
Mageblade
Hexblade
Totem Warrior
Shaman
Shugenja
Sohei
Favored Soul
Ritual Warrior
Guttermage
Battle Dancer
Jester
War Mage
And a couple of others that I've forgotten. Only a handful have actually seen playtime.

I removed Sorcerers since I'm using spell points, and didn't much see the point in them then. Although I've toyed with the idea of putting them back in and giving them a few bonus spell points each level so that they retain the ability to cast more spells, but don't have the flexibility in their spell selection compared to wizards.

The current group consists of:
dwarf cleric
half-elf necromancer
shifter barbarian
shifter druid/barbarian.

For what it's worth, a game that will propably soon start will most likely consist of:
beguiler (me)
fighter/sorcerer
spellthief
soulknife
psychic warrior

Yeah, where going to be screwed by any major fight, but at least I play a char that can get away.

Campaign 1
Andras - Rogue/Ranger (homebrewed version)
Braden - Favored Soul
Gervais - Sorcerer
Rake - Shadowed Tiefling Fighter/PrC Planar Champion
Trevier - Fighter/Cleric/PrC Paladin ala Unerathed Arcana
Triona - Half-fey Druid

Campaign 2
Brother Harl - Priest (Thieves' World Player's Manual)
Cadogan - Rogue
Colm - Godsworn (Thieves' World Player's Manual)
Jaron - Noble (Thieves' World Player's Manual)
Mard - Ranger (homebrewed version)
Paden - Magician (Thieves' World Player's Manual)

The classes tend to depend on the size of the group. In a large group you can get away with not having any heavy tanker or a pure caster as the chances are two or more people will have some skill in it and be able to synergise in that area. As our group is rather small we've got the classic Fighter, Rogue, Cleric, Caster however our caster happens to be a Psion. Within this there are some prestige classes Dervish and Tempest for the fighter, Thrallherd for the Psion and one that I'm not sure of for the cleric. The general shape always remains the same though. It needs to for a group this small to be as functional as possible.

I DM one campaign and play in another. Of the PCs and party NPCs, the only PHB classes not represented are the bard, druid, and monk.

One character is a targeteer, a specialist fighter from Dragon a while back.

When our next campaign starts up, we'll probably use many of the newer core classes.

Just started one with two players, each playing a multiclassed 2nd level character. One went with Dwarf Paragon 1/Monk 1, the other is a Cloistered Cleric 1/Wizard 1. Former is thinking of just sticking with those two classes, latter plans to eventually hit the Hallowed Mage prestige class from Monte's Book of Hallowed Might.

In general, I'm OK with anything from the PHB, almost any of the Unearthed Arcana variants, and stuff from the (relatively few) other supplements I've got. If somebody had a class they really liked from another book, they could show me and I'd probably be OK with it, but that's unlikely in this campaign where one player is new to D&D and the other hasn't played in many years.

I have a large (10 players, soon to become 12) group in Midwood. They play everything but monk (not available in the setting) and sorcerer (which is a shame, since I have a non-draconic hook for them in the setting) currently.

I went with a mix of AE and PHB classes for our Oathbound game: Fighter, Ranger, Rogue, Barbarian, Psion, Psychic Warrior, Akashic, Champion, Greenbond, Magister, Mageblade, Oathsworn, Totem Warrior, Unfettered and Witch. The Runethane seemed inferior in almost all regards to the Magister, so he was nixed, and the Ritual Warrior seemed really weak as well. Not a fan of the Warmain, as its just a boring fighter with even fewer choices. One player wanted to play a dragon, so I made a lesser drake class to 20. I made a bunch of channeling related feats, so that people of any class could be a priest.

The party consists of

Human Magister
Picker Ranger/Rafter (specialized explorer prestige class)
Thorn Greenbond/Ranger
Sky Drake paragon
Human ranger/Akashic
Nightling fighter/rogue
