What material do you NOT allow? or how do you screen?

First point of call: my campaign setting notes, which contain all the rule 0's for this particular campaign.

Second port of call - the 3 core rulebooks

Third port of call - the psionics handbook

Everything else is disallowed by default. I do review things and add them to the campaign setting notes as and when necessary - so (for instance) some martial arts feats and a modified iaijutsu master class have found their way in, as has the duellist prestige class from S&F, the Alienist from T&B, the chakram (exotic weapon) from FR and a few other things.

Psi HB, 3 core books, and the feats, and only the feats, from the Splatbooks.

When 2 of my players were taking just 2 levels of a prestige class the last campaign, even though they were highly involved with the organization that "gave" it to them, I basically said no to all but 4 prestige classes.

I allow EVERYTHING! Well, not quite. My rule is that I need to read over it before I allow it. Most of the stuff from the splatbooks is pretty balanced, so I haven't disallowed anything yet.
 

I disallow anything that does not come from the core three books and has "Mercurial" as a prefix, "of Speed" as a suffix, or anything similar.
