D&D General what other monsters can we give subtypes to like dragons but not dragons?

dragons have plenty of types and lore but I am bored of them being the only option, giants are lacking something in dnd and I have no idea what else could work anyone got any ideas?

Might I suggest that ordered and predictable diversity, a'la dragons, is what you're asking for.
