D&D General what other monsters can we give subtypes to like dragons but not dragons?

dragons have plenty of types and lore but I am bored of them being the only option, giants are lacking something in dnd and I have no idea what else could work anyone got any ideas?

What sort of "options" are you looking for, exactly? There are quite a few monsters with subtypes, like goblinoids or werecreatures or oozes.
Do you have a more specific role or theme in mind?
Or are you looking to build a new monster "family" entirely, meant to sit atop the food chain as dragons and giants do?

I mean...there are mephits with subtypes....elves, dwarves, gnomes....

Beholders? They used to have a ton of varieties beyond just the ball with a variable number of eyes:

Hive Mother (the one with the bumps): can command other beholders.
Directors (the dude on the centipede): can mindlink with their mounts.
Examiners (the guy with the legs): researches spells and makes magic items.
Lensman (the humanoid dude; actually supposed to be more of a starfish): mindless drone.
Overseer (the tree dude): no idea. Basically sessile, has color-changing camo fungus covering.
Watcher (the one with the giant eyes): Uses misdirection, illusions, and shadow magic.

Can you clarify what you are asking? I just don't know what the questions is so it is hard to give you an answer / opinion.

I agree, but I will point out that 5e has the following variants:

Beholder
Beholder zombie
death kiss
death tyrant
gauth
gazer

So you want a range of templates to put on different monsters?

I assume your not looking for all the different types of gnolls, orcs, trolls, etc. that 5e already has?
