D&D General what other monsters can we give subtypes to like dragons but not dragons?

I agree, but I will point out that 5e has the following variants:

Beholder
Beholder zombie
death kiss
death tyrant
gauth
gazer

Yeah, and those are all balls with variable numbers of eyes. The 2e beholders I mentioned above very much weren't that.

How about unicorns. Maybe unicorns aligned with various types of trees:

• Unicorn of the Oaks: your typical unicorn.
• Unicorn of the Pines: a sure-footed high mountain variety.
• Unicorn of the Palms: an unexpected tropical variety.

• Gelatinous Cube: Typical.
• Gelatinous Ball: A much faster variety.
• Gelatinous Square: With a fast-acting acid that turns prey into puddles before they know what hit them.

• Grey owlbear: This one can talk for some reason.
