Ahem...
Naturally, MM is a staple. Book of Fiends (and its predescessors) I use for ALL my fiendish needs, and the Book of Templates serves my templating needs, regardless of game.
Other than that, which monster books I use varies from world to world that I run. I tend to use recurring monsters from a variety of sources for any given campaign, and may mix it up for different regions.
For example, I used a few creatures from Creature Collection, Creature Collection II, and Necromatic Lore to help shape my classic high fantasy game. In my exotic East Asian themed subsetting, I use OA, Creatures of Rokugan, and Jade Dragons and Hungry Ghosts. For my river of worlds and pirate game, I was using CCIII and Creatures of the Boundless Blue
For my Second World game, I am mixing up the influences a bit, with more frequent use of Tome of Horrors, Liber Bestarius, and Monsters of the Mind. My dragon-themed sub-campaign will see use of Book of Dragons, Draconomicon, and Draconic Lore. Forays into Europe will utilize Monsternomicon, fitting the theme of the area.
Honestly, I am finding that MMII, and (especially) Fiend Folio don't strike a chord with me. There's a few creatures in there that are great (especially in MMII, and the classes in the FF), but a lot of them strike me as "leftovers" or weakly try to be "bigger and better" than creatures in the MM but come off with much less flavor.
