Batman is a guy with a lot of gadgets, with a seemingly superhuman fighting ability, as well as incredible endurance. Jame Bond, John McClane, the RED folks, and others certainly, in part or in total, fit the same bill. Both Conan and Red Sonja also are just warrior with great strength, fighting ability, and endurance.

The inclusion of Star Wars (Epic Fantasy in Space), as well as the Sword and Sorcery movies already mentioned, in the OP also opens the doors to a wide variety of Fantasy movies, like LotR.

I was posted with the notion that "Superhero," as defined by the movie listings in the OP, is movies with heroes that display superhuman qualities, either inherent or through the use of gadgets.

Okay, that's... really broad. By that, you can pretty much revise the question to be "name all the actors and actresses who have made more than one sci-fi, fantasy, and/or action picture".

The entire starring cast (and most of the guest stars, bit parts and extras) of the 2009 Star Trek movie.
Using your guidelines that thing reads like a who's who of Sci-Fi/fantasy/comic book goodness
