I've made a slightly spoilerish skim through Chapter One only, to see what use you can make of the things you mention.
Appears in chapter (knowledge check might be useful):
Undead, dwarf, elemental, beast, goblin, plant, monstrosity, giant, kobold, aberration, fey
Specific skill checks:
Beast - fishing for knucklehead trout; undead - not very important; beast - very useful, could save a lot of tramping through the woods; human;
Specifically useful language (but not why you would think): Draconic
If you are using secrets, there are some of those that suggest a choice of favoured enemy.
