Would A Paladin Break The Speed Limit?

Depends on the circumstance.

On an empty road, with no particular need to get to the destination in a hurry, no. But society deems this a small issue, certainly if someone's life in in jeopardy, he'll put pedal to the metal.

On a road full of others who are egregiously speeding, going slow can actually be a hazard. If slowing them down is not an option, speeding himself up may be more safe, and lead to a more orderly traffic experience for all.

A paladin would simply leave the Chicago metropolitan area and move to rural Minnesota, where everyone drives 5 miles under the speed limit.

...in the left lane...with the turn signal on... ;)

Paladin's vehicles of choice: Chevrolet Cavalier or Dodge Charger.

The Crown Victoria is more a Knight's vehicle of choice ("For Crown and Country").
