Finnan will try claim a suit of studded leather armour (though I appreciate it may be better used on other characters), a dagger and his sling - no ammo though (not that that is a huge problem).

We have weapons and numbers and the element of surprise.
Even if those who stink at melee combat used the help action to give advantage on attack rolls I think we can take 'em.

The question is order. I think Kitchen/dining hall first. Then the 4 sleeping quarters and finally the priestess' chamber. Is there a better plan? (even though I know it won't work this way)

Looking at the map again, the main temple is on the way to the kitchens. We will have to be quiet going past them. I doubt we'll want to tangle with the high priestess first. So my original plan still stands, we just have to be aware of sneaking past the temple.

The other issue with the plan is what do we do with the prisoners who won't come with us. Trust them to stay quiet and undiscovered?

I think it is because you should be ready to run (have food and water) if things go ugly.
