I'd say stick with the fighter, preferably a greatweapon fighter. There are enough ways to boost damage with items, you can almost feel like a striker with the right equipment. Also there are plenty of fighter powers and stances to support this.
You might want an axe or hammer rather than a sword though. These typically have more additional damage features than swords, but a sword is workable too.
Feats of note: Superior Weapon, Focus, Expertise, Hewing Charge, Powerful Charge, Fighter Weapon Specialization
Multiclass feats of note: Disciple of Divine Wrath, Warrior of the Wild, Berserker's Fury, Bravo
Powers of note: Brash Strike, Reaping Strike, Villain's Menace, Battle Fury Stance, Rain of Steel
Equipment of note: Vanguard weapon, Horned Helm, Gauntlets of Blood.
This sort of fighter will feel very much like a striker, if you play him as such, and will likely need a defender to help him out, since a defender role should not really be expected from a build completely focused on damage. You could make him a complete glass cannon, going with a starting 20 strength, 16 con, but 18/18 or 18/16 will probably be more versatile.
Barbarian reflavoring will also work, rages can typically be likened to stance powers. So if your player likes the Barbarian mechanics better, that's what he should go for.
