As a one-time deal, the entire party in my previous campaign (four PCs plus a few NPCs) once got a ride on the back of a dragon turtle allied with a merfolk village they had just aided. Considering their ship had been destroyed and they were hundreds of miles from the shore to which they were headed, this was kind of a big deal.

My wife's halfling druid hatched and raised an Ankheg before making it her animal companion. Had to have a specialty burrowing saddle built but she rode 'Ankhy' into battle until it died. Then she re-incarnated it into a blood hawk. Never seen a more confused bird, smashing it's head into the ground in an attempt to burrow. Eventually she was riding that instead.

Once played a gnome thief which jumped from a tree onto a straggling orcs back in an attempt to backstab him. Rolled a 1 on the attack! The orc was technically my mount for 10 seconds until he threw me back into a tree.

Funny. My first thought was that would be the craziest one and someone would probably make it up to "sound cool." So, let's hear it...

The GM had given us a section of dungeon full of oozes, molds, slimes, and such. Walking on the floor had... unfortunate consequences. We took one door off its hinges, and laid it flat on top of the cube to distribute weight. We put our M-U on that, and he cast Tenser's Floating Disk for the rest of the party to ride. We went like that until the cube wandered out of that section of the dungeon. It took a while...

So the long story part of this was not the explanation of the situation, but that it took 8 in game days make your way out of the section. XD
