Lawyer by day. Rules lawyer by night.
My gripe isn't with this cover as with the alternate cover strategy, or lack thereof.

Personally, I love the look of the PHB/DMG/MM alternate covers which is also used for Icewind Dale.

But then every other one is a different look. There's no continuity to it.

No. The woman is Ezmerelda d'Avenir, his apprentice. I'm confused about her leg, though - she's supposed to have a mechanical replacement for one of her legs, and in this picture, it looks like both are "normal."
Maybe she modified it into a new model that gives it a sleeker, modern look? The Vistani are planar travelers so its not impossible that she visited the Artificer city Kaladesh and got it souped up.

I wouldn’t mind the original so much if it didn’t look like Ezmerelda was trying to pull an excorsist trying to impossibly twist her head about. I’ll probably go for the alt cover, but I wish her replacement leg was more obvious (perhaps this is supposed to her before she lost it, but that’s a bit silly).

In the first (5E) printing it was made explicit in the text that Esmerelda conceals the fact that she has a prosthetic leg, not wanting to reveal a perceived weakness to enemies.

I believe that was retconned as ableist in the reprint, but I don't actually own that version. Perhaps someone who does can confirm?

Regardless, that picture would accurately reflect the earlier version.
