Sure, the 5E CR table works. But it could work better, is what I mean. 4E isn't my favorite edition, but they did a better job with this sort of thing for their monsters. (Though it did take until MM3 to get it right.)

Also, have you ever used a bow (or sling or thrown an axe)? There is a lot more going on than just STR to effectively hit your target.
I have. But none of those use STR to adjust "to hit" in D&D.
All that being said, I think if they used STR for damage and DEX to hit, it might make sense to more people than what we have now.
This, across the board, melee and ranged, I might try at my table to see how it shakes out.

The shift to the grid, in 3E, especially 3.5, really irked me. I've always been more theater of the mind (using miniatures strictly for things like marching order or when combat is so complicated it requires figures to track). But it always felt like shifting from one game to another when combat started and we used the grid. I especially hated how in official products this led to encounters built around said grid

When it comes to bows, one alternative I've considered is to have bonuses tied to both dex and strength, with an emphasis on dex. So your attack and damage bonus is limited to double your strength modifier. No more 8 strength archers, but archers also don't need to be the most buff PCs in the group.

I get "use dex to hit, strength for damage" but that doesn't strike me as necessarily better. You need a pretty hefty bow to impart enough momentum to an arrow for it to pierce any type of armor. An arrow that travels faster will be more difficult to dodge for those that rely on dex for AC. Not that you can dodge an arrow in the first place, but dex and AC is a separate issue.

I could see that working ideally it would have to be tested to see if it would work.

My point was that in reality, striking something and doing damage, whether ranged or melee is always about more than one D&D type stat. It really takes a combination of several stats. I would guess STR, DEX, INT, & WIS are truly involved in striking (to hit and damage). A game necessarily simplifies that and I don't really mind which one it chooses. It is an abstraction after all.
