I like the "one feature and that's it" approach, but I would also give each race a simple numerical bonus to either a particular save, to AC, or [there's lots of similar options, but it's late and I'm tired]. Also, I would lean toward just giving all the fey races innate spellcasting, but able to choose from a few cantrips/spells at each level that innate spellcasting gives you a new one.

I don't think so, but with explicit instructions, you should minimize folks selecting more than one option per race.

Ex. "Choose one trait per race, select the most iconic trait for each race"

or
[ ] (choose one per race) Dwarf - Darkvision

I thought about it, but since I couldn't actually stop people from voting for more than one trait, which could lead to screwing things up, I decided against it.

I am just using this as a starting point if I get enough responses (which was why omitted ASIs).

Going solely by “most iconic feature” with no concerns for balance, I would say…

Dwarf: Stonecunning
Elf: Trance
Halfling: Lucky
Human: Feat
Dragonborn: Breath weapon
Gnome: toss-up between Tinker and Speak with Small Beasts, depending on whether you favor dwarfier or elfier gnomes.
Half-Elf: Skill Versatility, I guess?
Half-Orc: Relentless Endurance
Tiefling: Infernal Legacy (and Hellish Rebuke in particular).
