Good luck getting a grenade through a small(few foot) hole while being shot at. It's not like they could run up to that hole without being shot multiple times. As for reach everyone, armored hands with guns can fit through it just fine if some of them dodge out of the area that was reachable. The way it was set up, almost all of the imperials would have started in the field of fire. Plus an armed Din was inside encased fully in beskar. He'd have been able to fight as well, taking out the grenade attempts. The imperials would have been toast if she had cut a hole there.
So, these troopers are going to just stand there for thirty seconds watching Bo-Katan carving her way through a door, without reacting in any way? Not getting into cover, not moving up to flank the hole so that they can shoot any people or hands that come through while being out of the line of fire themselves?

Edit: Plus, before they could even recover to the point of formulating the grenade strategy, Bo could have moved left and right, cutting new holes for even more mandalorians to shoot through, covering an even wider area with blaster fire at the imperials.
Suppress from a steep angle. Send in troopers along the walls, where they can't be effectively shot at. Toss in grenades.

Hang back and use launchers for either direct, or indirect fire. They don't even need to get close.

... or...

Launch one of the many vehicles they have in the bays, above, and plaster everything in that compartment.

They had to get out, or die.

No. It takes less than 5 seconds. It took her 30 to cut a large hole in a thick metal wall, big enough for a large man in full armor to walk through. A 1-2 foot hole in thick glass(an easier material to cut, through) would take just a few seconds. But hey, let's assume 30 seconds. What would they do? Walk in circles? They were out in a wide open space.

Cutting a slot might have been effective, but good going if you can think of that under pressure.
It's not narrow with a 1-2 foot hole. The barrel comes through and can cover almost that entire area. Even if it's not through, it still covers half the area or more. Two or three holes and it's all covered, and she can cut the other two holes in the amount of time it takes a group that large to get out of the first half.

And there was next to no pressure. Nobody was shooting at them. Bo has also demonstrated quick thinking with and withtout the darksaber under real pressure in the past. Several times.

Suppress what? To the imperials it is a hard hole to shoot through. They are at range. Hang back where? Out in the open because there wasn't cover? Use what launchers? The mandalorians are going to sit there after the imperials ask "Would you please hold on a minute? We have to run back to the ship and get some launchers to kill you with." And if they could do the last one, the mandos never would have made it out.

And you're still forgetting the armed and free Din that was out there. They wouldn't have had time to capture him had she cut a hole.

Well, they could, for instance, open the door. All the way (probably wrenching the saber from Bo-katan's hand), to make it an even fight. Or just a few inches, to roll in some grenades, then closed again.

Or walk right up to it, either side of where the hole's being made, and shoot any hand or gun that pokes through.

Opening it wouldn't make it even I don't think. The mandalorians would have the advantage, but all of them fighting is what they wanted, so that would be a good thing. I also don't think the saber would have been pulled out of her hand. Glass isn't hard to cut through and she would likely have been fine. Opening it a few inches to roll grenades in would require some prior planning and coordination, which wouldn't happen before the multiple holes could be finished. And dollars to donuts the mandalorians had grenades to roll the other way as well.

Bo would have loooooved for them to be that dumb. I mean, a guy standing right next to the glass for the saber to run him through as she stabs through the glass would be gravy for her. :)

They'd have been just fine standing a couple of feet back, and still had a perfect crossfire on anyone foolish enough to stick a hand through.

As @MarkB said they have cover by leave of the Imperials. If it no longer serves their purposes, then they no longer have cover. It's not like the Mandalorians were in control of the doors, which is why Bo had to cut an exit.

They're in a military base. Surely it doesn't take more than a couple of minutes to whistle up another fire team, with appropriate weapons?

A free and armed Din was a dead Din, when they wanted it. Instead they wanted him prisoner, for some reason.
