Are we supposed to like Sabine after that? I haven't watched the cartoons, but I'm guessing Ezra and the other rebels would give their lives to stop that ship..... All she had to do was give up someone she already thought was dread. And, I'm not really interested in a long lecture about the comics..... This is the show we are seeing.

She never thought Ezra was dead, and he did tell her he was relying on her. On the other hand she doesn't have any specific reason to think he's helpless without her.

I liked the mandalorian cameo and I could clearly tell many were just redshirts (spoilers)

well...yeah. It was actually at tumultuous choice for her, and I'm sure a little dark side infused persuasion went a long way as well. I was actually thrilled we finally saw a character with some humanizing flaws.
Lets also keep in mind that the stakes are "vague" at the moment. Sure they go to see Thrawn, but is he even there, if he comes back how big a deal will it be etc. This isn't a death star where if I don't stop it now literally a planet of people is about to get iced, its one guy. Now WE know that Thrawn is the uber bad ass and will absolutely bring about a new reign of terror, but its easy to rationalize it in the moment for Sabine. Maybe it won't be "that bad", heck maybe on the ship I can stop them, etc. All those rationalizations go through your mind when its a loved one your about to excel for the rest of their life.
I will say, Baylon is a great bad guy. It feels like what they would have done with Dooku if they had more time with him, this dark side user that's just suave and utterly in control. I also like that he gives his word and intends to keep it. No immediate bad guy betrayal "just because I'm evil", you can tell he really does believe in this "greater good" that he is working towards.
I like his style where he's fighting with "decent" agility, but no where near Ashoka's, but then you can literally see him amp up the power and knock Ashoka back.
I also appreciated that Ashoka's concern for Sabine was the opening for Baylon to knock her off the ledge. Like master like padawan, Ashoka never could let those attachments go, and ultimately gave Baylon the opening. Its nice because Ashoka being as strong as she is its really questionable if this new guy should be able to take her down, so this narratively gives us the out. We can say "in a straight up fight, Ashoka wins" while still allowing her to lose in this particular scenario.
We also have teh "first" Holdo maneuver, and this one works a lot better for me, as the ship is standing still for a while to calculate, and the fighter squadron moves right into their path, not knowing they are about to launch. It gives the feeling that this really is a "1 in a million" kind of fluke, and not some new manuever every fleet in the galaxy should be using.

We need to remember that there is a planned Mandoverse movie that will wrap up all the plot points of the different post-RofJ shows, and that means Thrawn and Co will make it back to their galaxy and will survive until the movie. Maybe he gets captured, like Gideon was, and then freed by his followers, again like Gideon was, maybe in Ahsoka season 2 or Mando season 4, and then the movie is the big finale to everything.
As an aside, maybe Sabine is thinking that she goes along for the ride and Ezra finds her and frees her, or the other way around, and they find some way back to their home galaxy from there.

Yes? I mean, she's clearly not the same person she was in Rebels. She's suffering from a lot of trauma brought on by the destruction of her people. The Wrens didn't live on Mandalore itself, so I'm guessing her mother and brother* went to defend the planet and died there, and she feels some survivor's guilt for not having been there with them -- and it would seem she also blames Ahsoka for not letting her go. Toss in the fact that, when she was studying at the Imperial Academy, she designed a weapon that targets beskar ... and you've got lots of guilt and trauma to unpack there.
That said, I'm not sure why Ezra would count as the "only family she has left" when Hera and Zeb are still around. But then there was always an implied romantic connection between Sabine and Ezra in Rebels, so that might be the difference here.
*Her father was an artist, not a warrior, so I'm not sure why he would have been on Mandalore during the war.

So, with Ahsoka in the World Between Worlds, she has a means of bypassing great distances in time and space, so she may have no problem reaching the new galaxy.
But for Hera, there's another possible method left open to her, one which will require her to again face an old fear, and may require Jacen to harness his connection to the Force.

Seriously, though, Ahsoka might make one of those "I need to go back and do this one thing, then I will return to being dead" kinda deals.
