We call them NPCs and assign them scores based on their role in the game. Assuming player characters are not representative of the majority of the population, there is no reason to apply statistical averages on them.
OK - for the sake of the argument: Why shouldn´t / couldn't my goliath with max strength be stronger as your gnome with max strength?
And: How do we know the "statistical averages" of a species? Well - "Oh, lets look at the picture of a group of Orcs - Gee, most of them seem to be stronger than a human!" or... looking at species modifiers ;)

Because stats in D&D don't represent real-world measures of anything. They are about modifiers to die rolls.

Oh, and because the Goliath gets the Powerful Build trait, that covers much of the effective difference.
 

Look at the Gnome. Then look at the (Half-)Orc. Then look again at the Gnome.
Explain how this can be "abstract"?!?

I don't think this is your intention, and I have said many times, I think the people making this argument have good intentions, think they are making the world better, and believe in what they are doing. When the Satanic Panic happened my D&D books were taken away. I didn't blame my parents. They were trying to protect me from something they thought was a harmful influence. They were still good people. So I can juggle the idea that the development of this mindset is a bad idea, that is stifling creativity, while also understanding that just because someone believes in an idea I think is bad, it doesn't make them bad. Good people can believe in bad ideas (our understanding of things is so far from perfect, most people believe in faulty ideas in some part of their life, including myself I am sure).
Well, at least now you’re being honestly clear in your argument. There is apparently no difference between efforts to make the game more inclusive and less bigoted and efforts by misinformed and misguided evangelicals to remove the game from the public.

Glad we cleared that up.
