The gluten free breads in my experience tend to be dry and hard to swallow, so I pour some gravy on them and put in the microwave. Taste great that way
Next idea: you’ve got a proof of concept (gravy dipping); now experiment with other tasty fluid/confiments to come up with more genius pairings.

Also, you might try toaster oven, regular oven or even pan heating to improve your bread textures.

Toasting definitely helps. And honestly sandwiches are usually pretty good with Gluten free bread. I have had hamburgers at Burtons Grill and they use a gluten free roll. It tastes great. Udi's makes very good sliced bread. And if you are putting things on like cheese, and other toppings you are not likely to notice. You just need to be mindful that some gluten free breads hold up better or worse than regular breads to things like moisture. The other thing it really comes down to the flour blend they choose. There are so many varieties out there, that some come very close to tasting like real bread. I do find with gluten free breads usually something is sacrificed by the particular blend of flours (taste, texture, moisture and stretchiness). But you can often overlook this one thing. Just as an example, there was a corn and qinuo pasta I used to like a lot. I felt the texture was pretty close to real pasta, but the corn gave it a distinct flavor that sometimes popped out with red sauce

The reason pizza is so difficult to replicate is that gluten is the thing in bread that gives it that stretchiness. One of the more funny emulations I encountered was with Against the Grain Frozen pizza. Their pesto pizza is actually really good. And the first few times I tried I was like "wow, this tastes exactly like real pizza crust". But the more I ate it the more they got the chewy feeling in the crust with an almost gelatinous middle. It is still good even after you realize this, but once you notice it is hard not to sense every bite lol
 

I recently heard about a version of the traditional peanut butter and jelly sandwich that also had sliced bananas, sliced strawberries, and chocolate chips. I haven’t tried it but it sounds epic.

I haven't done that but I used to put slices of banana in my peanut butter and jelly. Fluffernutter sandwiches were another variation that was pretty ubiquitous when I was a kid in school
 

This isn't particularly unusual as sandwiches go, but I've been told I need to cut down on the carbs and to drop the white bread. I noticed at the grocery store last week that wheat bread and honey wheat bread have the same number of carbs, so I went with the honey wheat, which I'd never had before. (Up to that point, I was strictly a white bread or sour dough guy - I can tolerate wheat bread, but it's not my favorite.) I've been eating turkey and cheese sandwiches on the honey wheat for lunch at work, and they're good, but today I tried a toasted cheese sandwich on honey wheat bread. Not bad.

Does anybody else eat sandwiches with mayonaise and slices of meatloaf?
I’m not a fan of meatloaf in general. I didn’t find one I liked until I made one myself. Since then, I’ve found one place that makes a meatloaf sandwich I’d eat with a smile.

But in each case, the condiments were all tomato based, so I’d have to say that was unusual.

However, I don’t see a reason why it couldn’t work. After all, meatloaf is just seasoned meat. And I eat sausages (also seasoned meat) on sandwiches with mayo all the time.🤷🏾‍♂️

Hell- I might give that a go sometime.👍🏽
