The layout shown is the book layout. The only changes will be editing-pass type tweaks (like the aforementioned indents).
Im missing the reach of the mirage monster's attack. It doesn't have a stat block (as it is a variant) but any changes should be stated in the main text.
I suppose the pseudopods reach is 15 feet, because that's the reach of the grasping pseudopod legendary action; but is the bite reach still 5 ft, even though its a huge creature?

Between telepathic sense & the water aversion, this version of the mimic is actually interesting.

Because they are not from another plane (aberrations) and they're basically normal flesh (unlike oozes).

In 3e Mimics were Aberations and I for one would rather view mimics as Aberations r

Very Squishy.
Rule? No. But they usually are. They may have become naturalized on the material plane, though.
And you are free and welcome to do so.
(Honestly, I don't really care what they are classified as - I was just spitballin' ideas as to why they could be classed monstrosities.)
