Wife's chicken shish. Nice enough but a bit bland needed something. Sauces were on the side probably should have just stirred them in.

That second place reminds me a LOT of a deli I hit about 30 minutes from my house. The owner teaches sandwich making at the culinary institute, so I’ve been taking notes with every sandwich I order.

I haven’t seen anything like those Caribbean sandwiches, though. There’s not much of that cuisine around here, and one of the ones I used to hit closed 8+ years ago.

I've watched a few of his food videos. Cracked up when he found an Australian coffee shop. Only cost triple what they do here (NZ coffee culture is Australian influenced).

Here a dish with fried potatoes (fried in oil, with lots of cayenne pepper, 1 yellow onion, little bit of red onion, and finely sliced chili, with ground peppar and some balsamic apple cider vinegar) served with a sallad of half a red bell pepper, half a cucumber, 3 sliced cherry tomatoes and half a leek finely sliced. To this is added shredded roast beef and brie cheese...

We tried torrijas tonight. Torrijas are a Spanish/Mexican-style french toast. They did not turn out well. I soaked them too long in the milk so they were way too soggy. Adjusted the recipe accordingly. One or two turned out right. The inside of the bread tasted like custard.

Torrijas

Day old bread or baguette
3 eggs
400ml milk
1 tsp vanilla
2 tbsp butter or oil

Cut bread into 4cm (~1.5in) thick slices. Pour milk and vanilla into first bowl, whisk. Crack eggs into second bowl, whisk. Heat fat in pan over medium heat.

Soak bread in milk for about 5 seconds per side. Dredge bread in egg, both sides.

Cook until golden brown both sides.

Serve.

Cooked some ribeyes and a potato & onion side dish a couple times over the past week or so. The notable part of that was that we were trying out som new seasoning mixes we found in CostCo.

Long story short: we’ve liked both of the mixes we’ve tried so far- very balanced flavors with nothing dominating. We’re going to keep looking at this brand in the future, because they have LOTS of mixes, plus sauces and other products as well.

I was lucky enough to have a Kinders across the street from my college and must have eaten there at least twice a week. I was beyond floored when I started to see their products at grocery stores across the States (just a small chain from North California after all).

In all honesty, everything they make is gold. BBQ sauces, oils, pre-packaged spice mixes (the Instant Pot carnitas one is amazing), meal kits, and of course their seasonings.

So glad you liked it!

Some more experimental cooking..

Cooked some red lenses.
While that was cooking, I fried some sliced carrots with a lot of black peppar. Then added some crushed red peppar as wee as some schechuan pepper. Then added cinnamon and nutmeg. When the carrots were on the verge of getting soft, I added a finely chopped red onion, garlic Clive and 1 finely sliced red chili. Then added a lot of finely sliced leek, some balsamic apple cider, and let that soak in.

Then drained the lenses, put them into the wok as well, stirred and served with sliced cherry tomatoes, crisp bread and a non alcoholic drink made of light lager beer and grapefruit. (Pripps Radler 0.0%)

So got a bit of heat, some sweetnes and a bit of sour.
