17th level Gestalt Barbarian/????

I'd actually go 2 La+6 Minotaur+Barbarian(&Prc) / Full Cleric (or rogue). As minotaur is strongly supporting barbarian you really shouldnt give up levels on another class that those levels do not go so well with. Of course then you'll lose some barb abilities but spellcasting (/rogue abililties) are worth it.
As supporting buffer id prefer cleric, but skillpoints sound tempting, specially with -int. Maybe Scout+dervish on the other side as you have reach already. Would be crazy to see whirling minotaur tumbling around and chopping everything.

I'd possibly gor for monk my friend but visualise it more as a pugilist. Great saves and some funky abilities; skills are pretty decent as well.

Throw in a few levels of Kensai from CW and you can enchant your own fists for a FRACTION of the cost and you cannot be disarmed or sundered!
 

I'm thinking stick with your original concept, Barb/Scout. If you have to stand there toe to toe then do so, if you can do better damage moving around then do that. 2 characters arn't going to form much of a defensive line for the third. The druid can move around on his own, plus summon meat shields for restricting the opponents movement if that's required.
